Every week when I go to the grocery store the same thought enters my mind as I am somewhere around aisle 6 or 7.... hmmmm, I started off so well.
I have a regular route through the store and it always starts with the produce section, heads into the cheeses and meats, through the bakery, around the olive bar and into the specialty section before entering the 'regular' part of the store. If you are familiar with Wegman's you know that they have everything. Everything. And then some. Exotic fruits and vegetables. Hard-to-find cheeses. Organic this and that. I literally love to go there.
My cart initially fills up with lots of fresh fruits and veggies, whole wheat breads, organic chicken and beef, organic milk and eggs. It's looking great in there! I am so proud of myself for the healthy foods I am providing for my family. Then comes the 'regular' part of the store.
Chips, pop tarts, chicken nuggets, pizza bagel bites, ice cream sandwiches. Hmmmmm, I started off so well.
So, to balance out the chicken nuggets and bagel bites that the kids have I make 'good' lunches too. This is one of my favorite recipes (I think I found it in Prevention... not sure anymore). It is very simple and it's a 'make your own amounts' kind of thing.
I call it the turkey, cheese and tomato baguette sandwich. Start by heating slices of fat free turkey on a skillet to remove some of the moisture. Then add some grated mozzarella cheese until it melts.
While that is going on you can be sauteing halved grape tomatoes in about 1/4 cup of olive oil until they are soft. Look at them sizzling....
As your tomatoes and turkey do their thing, slice baguette bread into 6" lengths and then cut in half. I use a healthy organic whole grain baguette...
Remove the turkey and cheese from the heat, use a slotted spoon and remove the tomatoes from the pan and set both aside. Place the halved baguette slices, cut side down, into the oil/tomato mixture in the pan and heat until the baguettes get very lightly toasted around the edges. They will soak up the mixture in the pan.
Now comes the good part! Make the sandwiches! Add the turkey and cheese and top with the tomatoes and dig in!!!!!
My kids and I love these. They are so easy - just make as much or as little as you need. No rocket science involved! Enjoy! :-)

Mmmmm. The sandwich looks delish, especially with all the tomatoes sitting on my counter staring at me. My husband and I call going to Wegmans an "event".
